Pretty enough to be the centerpiece of your patio flowerpot, 'Everleaf Thai Towers' is true to its name: prolific in leaf growth; deep, emerald, glossy green leaves; and forms an herbal tower. This cultivar holds off flower production up to 12 weeks longer than other types of basil, so you don't have to worry about pinching flowers off to keep your basil producing tender leaves.

Everleaf Thai Towers has a much more assertive taste than sweet basil and it is often compared to anise, the flavoring associated with black licorice. Fresh sprigs of Thai basil can be served with vegetable platters and nibbled on with spicy salads and chili dips. It can also be used in salads, vegetable dishes, or as a popular garnish for soup.

Everleaf Thai Towers Basil Dressing

Ingredients:

• 1 cup plain Greek yogurt* – full-fat
• Everleaf Thai Towers Basil
• Dill
• Parsley
• Mint
• Arugula
• 3 Tbs. green onion or chives, finely chopped
• 1 medium clove garlic, rough chop
• 3 Tbs. lemon juice
• Optional – 2 tsp anchovy paste or 2-4 anchovy fillets chopped
• Optional – pinch of cayenne or other hot pepper
• Salt and pepper to taste

Method: 1. Roughly chop fresh herbs.

2. Combine all ingredients in the bowl of a food processor or blender. Blend until smooth, there will be green flecks remaining in sauce.

3. Taste sauce and add salt, pepper and hot pepper according to taste.

4. Use immediately for dressing, dipping, marinating or store in an airtight container in the refrigerator for up to 7 days.
